Mesquite (Prosopis pallida) is an ancient desert food of the Americas — ground from the dried pods of the mesquite tree, which grows wild across the Sonoran desert, the Peruvian coast, and throughout arid regions from the southwestern United States through South America. Indigenous peoples of these regions have relied on mesquite pods as a primary food source for at least 2,000 years, grinding them into flour for bread, porridge, and fermented drinks.

Mesquite powder has a naturally sweet, malty, slightly caramel flavour — it requires no added sugar to taste satisfying. Unusually for a legume-family plant, the sweetness comes from natural fructose in the pod, not the seeds, so it has a low glycaemic index despite its sweetness. It is also rich in protein, soluble fibre, and minerals including calcium, magnesium, zinc, and iron.
